E1404 Oxidized Starch, also identified as INS 1404, is a food-grade modified starch produced through controlled oxidation of edible starch.

E1404 Identification and Analytical Methods
Identification procedures used for E1404 quality control include microscopic examination, iodine staining, copper reduction and oxidized-starch identification.
Non-pregelatinized E1404 retaining granular structure can be examined microscopically for characteristic starch-granule shape, size and structure.
A sample suspension is treated with iodine solution to evaluate the characteristic starch color response.
Following acid hydrolysis, the prepared sample reacts with alkaline copper tartrate reagent and produces the prescribed red precipitate.
Sodium-hypochlorite oxidized starch containing carboxyl groups can be identified using methylene-blue staining under the prescribed test conditions.
